A Day Late and a Pancake Short

Free-FM’s commercial and imaging producer Rob brought a recipe to our attention and if hubby had his way he would ask me to make it every day.  

It’s not so unusual to have pancakes with bacon but what about pancakes containing bacon?  You make your bacon. I do it under the broiler until it’s nice and crispy.  Then put it in a heated pan and pour pancake batter down the length of it. Flip, repeat.  You end up with a pancake that has enveloped your bacon.  Add syrup and enjoy!

I’m told it’s delicious because I haven’t tried one yet. And for some reason, maybe because the pancake is long instead of round, they seem to cook more easily and evenly. Maybe that’s just my experience. Anyway, it gets rave reviews around our house and was on the menu last night for Pancake Tuesday.

  1. Looks like a winner, even if I am not fond of pancakes.
    A less messy way to cook bacon is to put it on cookie cooling racks and set those on rimmed cookie sheets and put them in the oven at 375F or 190C. Cook for 15-20 minutes. Put cooked bacon on paper towels to drain and use as desired. A lot neater for cleanup than broiling or frying. For your pancake deal, use a shorter time in the oven and bacon will produce some fat on the heated griddle if you wish,
