Snack Trees

Today I want to share a favourite recipe. Derek calls them bark cookies. I make them just about every week and toss a couple of them into my lunch bag. There’s no oil, butter, egg or milk in them and there’s protein, fibre and fruit. When they’re not what you want in a cookie, I suppose they do taste a bit like bark. Chocolate, peanut butter bark. 

I’ve experimented with a couple of different versions of this recipe that include dark chocolate chips, coconut flakes or almond milk. But this one is my favourite. I use reduced-sugar peanut butter and unsweetened applesauce. They come out looking like something you’d find in the woods that would make you wonder what kind of animal it came out of, sure, but they’re pretty healthy as cookies go!

Ingredients: 3 ripe bananas, mashed

2 cups oats

1/4 cup peanut butter

1/4 cup cocoa powder

1/3 cup applesauce

1 tsp. vanilla

Preheat oven to 350.  Mash bananas, add the rest of the ingredients, stir and let sit for 20 min. Drop by teaspoonful onto ungreased cookie sheet and bake 10-12 minutes. Eat!
