Bread in the Cloud

Cloud bread is the latest food craze. It’s a bread-like baked good made without flour or butter. Each piece is 31 calories and has 0 carbs. So I took it to my test kitchen, which is also my regular kitchen, and gave it a go. 

Cloud bread is composed of a minimum of three ingredients: eggs, cream cheese and baking soda. Some people also add sweetener. Nutritionists have evaluated cloud bread and say that cream cheese is highly processed, and cottage cheese would be better source of protein, so that’s what I used.

Preheat the oven to 300 and pop in a cookie sheet lined with parchment paper.

Separate 3 eggs. Add your room temperature cream cheese, or pulverized cottage cheese, to the egg yolks and whip. Add 1/2 tsp baking soda to the whites and beat until stiff. Pour the white mix into the yolk and cheese mix and stir just until blended. Spoon small circles of the batter onto the parchment and bake about 15 minutes, until golden brown.

They taste like little omelets but they have a bread-like texture that could be used for small sandwiches.

I wasn’t too thrilled with their size, so I tried making bigger ones. That was a disaster! Everything on the paper ran together and made one big, thin blob.

I’m going to experiment some more with this using the original cream cheese idea, including flavoured cream cheeses. Some people add cinnamon or honey, but I wouldn’t want to add to the wetness. The batter is thin and runny as it is. I don’t know if I’d call this a “craze” in my world, but it’s certainly an option. A final note: they have to be kept in a plastic bag once they’ve cooled or they’ll get as stiff as meringue.  Mmm.  Meringue. When they come up with carb-free pie, you know I’ll be all over it.
